To say that Gioacchino Rossini was great is like saying that roses smell nice… The composer of operas such as The Barber of Seville, William Tell, and L’italiana in Algeri gave us 39 operas, 28 cantatas and anthems, 14 religious compositions, 32 songs, 21 instrumental compositions and the beautiful Sins of old age. His great merit, apart from everything else, was to elevate both opera buffa and opera series into the realm of high music. However, he became immortal not only through his musical work, but also through his fantastic achievements in… gastronomy! He invented sophisticated culinary recipes, including the famous truffle salad. He served it to his future wife, Isabella Colbran, as a mixture of Provencal oil, English mustard, French vinegar, lemon juice, pepper, salt and finely chopped truffles. He added that the Cardinal, the Secretary of State, personally blessed the salad. And… she married him!

But the most famous culinary composition of the composer is the tournedos Rossini. The dish requires beef steaks, black pepper, oil, beef broth, dry white wine and goose liver pate. The dish became popular and its recipe has successfully spread around the world! The fact that Rossini himself was a passionate gourmet can be seen even in his posture…
